
Ice Cream mix is pumped at a constant flow rate from the mix tank to a high temperature-short time (HTST) heat exchanger.
The device consists of stainless steel plates assembled so that ice cream mix flows between adjacent plates, exchanging heat with heat exchange fluids. These fluids can be:

Chemical and microbiological controls are exercised at key points in the process to ensure full compliance with prescribed standards for the product as sold.
The product is stored at temperatures suitable to ensure the product as dispatched is no warmer than -18°C.
